No matter what the activity, I always need to have an intuitive but engaging sock on my needles to keep me happy and calm. Lemon Curd Recipe

3 eggs
3/4 cup sugar
1 tbsp grated lemon rind (more if you would like it tarter)
1/2 cup lemon juice
2 tbsp soft butter

Whisk together eggs and sugar until smooth, then whisk in lemon rind and juice. Add in the softened butter. Microwave on high for 1 minute and whisk until smooth. Microwave for 3 minutes, whisking every 30 seconds. Cool and store in the refrigerator.
